500 grams okra
2 onions (finely chopped)
2 tomatoes (finely chopped)
5-6 cloves garlic (finely chopped)
1 inch ginger (finely chopped)
2 green chillies (finely chopped)
a pinch of asafoetida
1 teaspoon cumin
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
Red chilli powder as per taste
1/2 tsp garam masala
finely chopped coriander leaves
2-3 spoons oil
salt as per taste

method of making
To make ladyfinger vegetable, wash it and dry it. After this, cut a little from both the sides. So that the spices mix well with the ladyfinger.
After this, heat oil in a pan on gas. Then add cumin and asafoetida and crackle it. When cumin and asafoetida crackle well, add onion to it.
Then fry the onion until it turns golden. After this, add finely chopped garlic and ginger and fry for 30 seconds.
Now add finely chopped green chillies and fry a little. After this, add tomatoes and cook until the tomatoes become soft.
When the tomatoes become soft, add coriander powder, turmeric powder, red chilli powder and garam masala and mix well.
After this add chopped lady's finger to it and mix well. Cover the ladyfinger and cook on medium flame for 10-12 minutes.
However, keep stirring occasionally. So that the vegetables do not stick to the pan. Now garnish the prepared vegetable with coriander leaves.
Now enjoy with hot roti or rice.
