Material

Black Grapes: 1 kilogram

Sugar: 500 grams

Yeast: 5-10 grams

Water: About 1.5 to 2 liters

Whole spices like cinnamon, cloves, cardamom – in small quantities to taste.

Method of preparation

Separate the grapes from their stalks. Wash them thoroughly with water so that no dust or dirt remains. Crush the washed grapes lightly so that their juice comes out. Leave the peels and seeds on, as the color and tannins of red wine come from the peels.

Take a clean and dry large jar or container. Put the crushed grapes in the jar. Add sugar, yeast and if using, whole spices (tied in a muslin cloth bundle). Add enough boiled and cooled water to completely submerge the grapes. Mix all the ingredients well with a clean, dry wooden spoon.

Cover the mouth of the jar with a muslin cloth or loose lid. Do not close the lid tightly, as carbon dioxide gas is released during fermentation, which needs to be vented. Keep the jar in a cool and dark place. For the first 5-7 days, mix the mixture gently with a wooden spoon (pull down the cap) 2-3 times a day, so that the grape skins remain in contact with the juice and fermentation occurs properly. The fermentation process can last from 10 to 21 days. When the bubbles stop and the grape skins settle down, the fermentation is complete.

After fermentation is complete, strain the wine through a clean cloth or strainer. Remove skins, seeds and spices from grapes. Pour the strained wine into another clean container. Do not fill the container to the top, leave some space empty. Now close this container tightly and keep the wine in a cool and dark place for at least 1 to 3 months or more to mature. Longer aging makes the wine taste better. The longer you keep it, the better the flavor becomes.

When the wine is completely clear and drinkable, pour it into dark colored bottles and seal them. Dark colored bottles protect the wine from light.
