- Basmati rice – 2 cups
- Carrot – 1 (chopped)
- Beans – 1/2 cup
- Potato – 2 (chopped)
- Peas – 1/2 cup
- Onion – 2 (thin slices)
- Tomato – 1 (chopped)
- Curd – 1/2 cup
- Ginger-garlic paste – 1 tbsp
- Green chilli – 2
- Whole spices (bay leaves, cinnamon, cardamom, cloves)
- Biryani Masala – 1 tbsp
- Turmeric – 1/2 tsp
- Red chilli powder – 1 tsp
- Salt – as per taste
- Oil/Ghee – 3 tbsp
- Coriander and mint – to garnish
How to make Veg Biryani
Veg biryani is very easy to make. For this, first of all wash the Basmati rice and soak it for 20-30 minutes. Now boil water in a big vessel and add salt and whole spices in it.
Cook the rice till 70-80% and then filter it. Keep in mind that the rice is not cooked completely, so that the biryani can be prepared well in dum. Heat oil or ghee in a pan and add whole spices to it.
Now add onion and fry until it turns golden brown. After this add ginger-garlic paste and green chilli. Then add tomatoes and cook until soft. Now add turmeric, red chilli powder, biryani masala and salt.
After this add all the chopped vegetables and cook for 5-7 minutes. Finally add curd, mix well and let the masala thicken. Now, in a heavy bottomed vessel, first spread a layer of rice, then add vegetable masala on top of it. Similarly make 2-3 layers.
Add green coriander and mint on top. Cover the vessel and let it simmer on low flame for 10-15 minutes. Whoever eats this dish will not be left without asking for the recipe.
