Sometimes I feel like eating something heavy in the evening. In such a situation you can try Raj Kachori. It is amazingly tasty to eat. You can try it in lunch also. So let's know its recipe.

Ingredients to make Raj Kachori:
For Kachori:
1. Maida (flour) – 1 cup
2. Semolina (Rava) – 2 tbsp
3. Ghee – 2 tbsp
4. Salt – as per taste
5. Baking powder – 1/4 teaspoon (optional)
6. Water – to knead the dough
Stuffing Ingredients:
1. Boiled potatoes – 2-3 (mashed)
2. Boiled peas – 1/2 cup
3. Cumin – 1/2 teaspoon
4. Asafoetida – 1/4 teaspoon
5. Coriander powder – 1/2 teaspoon
6. Cumin powder – 1/2 teaspoon
7. Red chilli powder – 1/2 teaspoon
8. Mango powder – 1/2 teaspoon
9. Salt – as per taste
10. Green chilli – 1 (finely chopped)
11. Coriander leaves – 2 tbsp (finely chopped)
12. Garam masala – 1/2 teaspoon
For serving:
1. Curd – 1 cup (whipped)
2. Mint Chutney
3. Tamarind Chutney
4. Chaat Masala

How to make Raj Kachori
1. Kneading the Kachori Dough:
– First of all, add flour, semolina, salt, and baking powder (if using) in a vessel and mix.
– Now add ghee to it and mix it well.
– Knead the dough by gradually adding water. The dough should neither be too hard nor too soft.
– Cover the kneaded dough and keep it aside for 20-30 minutes.
2. Preparing the Stuffing Mixture:
– Heat oil in a pan and add cumin and asafoetida and temper it.
– Now add boiled potatoes, peas, coriander powder, cumin powder, red chilli powder, mango powder and salt and mix well.
Fry the mixture lightly and let it cool, then add chopped green chillies, coriander leaves and garam masala and mix.
3. Making Kachori:
– Make small balls from the kneaded dough.
– Roll each ball with a rolling pin and fill it with the filling mixture.
– Close the dough from all sides and make small round shaped kachoris.
4. Kachori Tala:
– Heat oil in a pan and fry the kachoris until they become golden and crisp.
– Keep in mind that the temperature of the oil should be moderate, so that the Kachori does not burn from outside and gets cooked properly from inside.

5. Serving:
– Take out the prepared Kachori in a plate and serve it topped with fresh curd, mint chutney, tamarind chutney and chaat masala. Enjoy Raj Kachori and share it with your friends and family!
