Inside CakeToasted Benne Flour Snacking Cake

Ingredients (Serves 8–10)

  • 1 cup all-purpose flour
  • ½ cup toasted benne flour (or toasted sesame flour)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream (or plain yogurt)
  • ½ cup milk

Optional Topping:

  • 2 tbsp toasted sesame seeds
  • Powdered sugar for dusting

Method

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan.
  2. Mix dry ingredients: In a bowl, whisk together all-purpose flour, toasted benne flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar: In a separate large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
  4. Combine wet and dry: Add the dry mixture to the butter mixture in three parts, alternating with sour cream and milk. Mix until just combined — do not overbeat.
  5. Bake: Pour batter into the prepared pan. Smooth the top and sprinkle with toasted sesame seeds if desired. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving.

Notes

  • Toasting benne flour intensifies its nutty flavor, giving the cake a deep, earthy richness.
  • This cake is tender and moist, perfect for snacking with tea or coffee.
  • You can substitute sour cream with Greek yogurt for a slightly tangier flavor.
