Inside CakeToasted Benne Flour Snacking Cake
Ingredients (Serves 8–10)
- 1 cup all-purpose flour
- ½ cup toasted benne flour (or toasted sesame flour)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream (or plain yogurt)
- ½ cup milk
Optional Topping:
- 2 tbsp toasted sesame seeds
- Powdered sugar for dusting
Method
- Preheat oven to 350°F (175°C). Grease and line an 8-inch square baking pan.
- Mix dry ingredients: In a bowl, whisk together all-purpose flour, toasted benne flour, baking powder, baking soda, and salt.
- Cream butter and sugar: In a separate large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each. Stir in vanilla.
- Combine wet and dry: Add the dry mixture to the butter mixture in three parts, alternating with sour cream and milk. Mix until just combined — do not overbeat.
- Bake: Pour batter into the prepared pan. Smooth the top and sprinkle with toasted sesame seeds if desired. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving.
