Irish Cheddar and Chive Boxty (Potato Pancakes)
Ingredients
- 2 medium russet potatoes, peeled
- 1 cup riced (mashed) potato
- 1 cup grated raw potato
- ½ cup all‑purpose flour
- ½ tsp baking powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 large egg, lightly beaten
- ½ cup whole milk
- 1 cup sharp Irish Cheddar, shredded
- 2 tbsp fresh chives, finely chopped
- Butter or oil, for frying
Method
- Prepare potatoes
- Boil one potato until tender, mash or rice it.
- Grate the second raw potato, squeeze out excess moisture using a clean towel.
- Mix batter
- In a bowl, combine riced potato, grated potato, flour, baking powder, salt, and pepper.
- Stir in egg and milk until smooth.
- Fold in shredded Cheddar and chopped chives.
- Cook pancakes
- Heat butter or oil in a skillet over medium heat.
- Drop spoonfuls of batter, flatten slightly.
- Cook 3–4 minutes per side until golden brown and crisp.
- Serve
- Enjoy hot with sour cream or smoked salmon.

- For extra crispiness, use a cast‑iron skillet.
- You can substitute part of the Cheddar with another sharp cheese for variation.
