Irish Cheddar and Chive Boxty (Potato Pancakes)

Ingredients

  • 2 medium russet potatoes, peeled
  • 1 cup riced (mashed) potato
  • 1 cup grated raw potato
  • ½ cup all‑purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 large egg, lightly beaten
  • ½ cup whole milk
  • 1 cup sharp Irish Cheddar, shredded
  • 2 tbsp fresh chives, finely chopped
  • Butter or oil, for frying

Method

  1. Prepare potatoes
    • Boil one potato until tender, mash or rice it.
    • Grate the second raw potato, squeeze out excess moisture using a clean towel.
  2. Mix batter
    • In a bowl, combine riced potato, grated potato, flour, baking powder, salt, and pepper.
    • Stir in egg and milk until smooth.
    • Fold in shredded Cheddar and chopped chives.
  3. Cook pancakes
    • Heat butter or oil in a skillet over medium heat.
    • Drop spoonfuls of batter, flatten slightly.
    • Cook 3–4 minutes per side until golden brown and crisp.
  4. Serve
    • Enjoy hot with sour cream or smoked salmon.

Tips

  • For extra crispiness, use a cast‑iron skillet.
  • You can substitute part of the Cheddar with another sharp cheese for variation.
  • Serve as a side dish with roasted meats or as a hearty breakfast item.
