Special among these dishes are Pakori Chaat and Dahi Bhalle which is also known as Dahi Bade. Everyone's mouth waters as soon as they hear the name of Chaat and Dahi Vade. Therefore, on the occasion of Diwali, both these things are prepared in most of the houses, but sometimes even after a lot of hard work, it seems that they do not have the market-like pleasure. Sometimes Dahi Bhalla does not remain soft and sometimes the pakoda in chaat does not become crispy. Ingredients for Pakori Chaat and Dahi Bhalla

  • Urad dal – ½ kg
  • Black pepper- 1 tablespoon
  • Cumin – ½ tsp
  • Fenugreek seeds- ¼ tsp
  • Fennel- ¼ tsp
  • Salt- as per taste
  • Ginger – ½ inch piece
  • Green chilli- 3-4
  • Celery- ¼ tsp
  • Red chilli powder – ½ tsp
  • Asafoetida – 2 pinches
  • Oil- as required
  • Lemon juice- ¼ tsp
  • Coriander leaves – ¼ cup
  • Pomegranate seeds – ½ cup
  • Tamarind chutney- as required
  • Baking Soda – 2 pinches

How to make dumplings

  • Wash urad dal thoroughly and soak it for at least 5-6 hours. It would be better than soaking overnight.
  • Finely chop ginger and green chillies.
  • Roast black pepper, coriander, cumin and fenugreek seeds in a pan.
  • Grind them coarsely.
  • Grind the lentils in a mixer and divide it into two parts. To make pakodas, you just have to beat it for two to three minutes.
  • Add ginger, green chilli, red chilli, asafoetida, turmeric salt to this dal and mix well.
  • Heat oil in a pan, make small dumplings and fry them. Take them out using a tissue in a plate. After the oil dries, fry them again so that the pakodas remain crispy from outside and soft from inside.
  • While serving, take out the dumplings in a bowl. Add chaat masala, salt and lemon juice over it. Garnish by adding coriander leaves, green chillies, pomegranate seeds, long pieces of ginger and tamarind chutney.

  • Beat the ground lentils for a long time. Add salt, backing soda, green chilli, ginger and dry fruits in it.
  • Put the vadas in oil and fry them well from both the sides until golden.
  • In a large bowl, add one spoon tamarind chutney, salt and red chilli and add two cups of water. Put five-six ice cubes in it and put the bowl in it.
  • Now take curd in a bowl and add prepared roasted masala and red chilli powder to it.
  • Add curd to it and add tamarind chutney and green chutney over it. Garnish with green coriander leaves and pomegranate seeds and serve.
