Japanese chef behind Michelin-recognized Tokyo restaurant to launch pasta spot in Singapore

Shusaku Toba, chef-owner of Michelin-recognized fine-dining restaurant sio Aoyama in Tokyo, is opening a casual pasta concept called sio pasta in Singapore.

Sio pasta will open at Raffles City Shopping Centre on March 26, the brand announced in an Instagram post on Wednesday.

The 28-seat venue will serve more than 10 fresh, Japanese-inspired pasta dishes, “prepared with the same care, quality ingredients, and thoughtful philosophy that defines sio in Tokyo,” it said. Prices will start at S$13.80 (US$10.93).

The restaurant is being introduced in partnership with J.A.P Dining Concepts, the franchise owner behind sushi chain Sushidan, Pizza Studio Tamaki and Yappari Steak in Singapore, 8days reported.

Sio pasta is a casual offshoot of sio Aoyama, which earned one Michelin star in 2023 and has since remained on the Michelin Guide Tokyo, according to AsiaOne.

In Japan, the sio brand runs several other concepts, including o/sio in Fukuoka, Fox in Nara, The New World in Osaka, and Delicious Pasta in Fukuoka.

Its founder, Toba, began his culinary career at 31 after time in a J-League football trainee program and a stint as a teacher. He later trained at top Tokyo restaurants, including Florilege and Aria di Tacubo, before launching sio in 2018, according to Time Out.
