Kashmiri Dahi Brinjal Recipe

500 grams brinjal

1 tablespoon lightly crushed fennel seeds

4 green cardamoms

3 tbsp mustard oil

1/3 tsp asafoetida

3 pinches of salt

2 cups curd

1 1/2 tbsp ginger powder

1 1/2 tsp red chilli powder

2 tbsp water

1/2 tsp turmeric

Wash, wipe the brinjal and cut into medium sized cubes.

Heat oil in a wide pan and deep fry the brinjal cubes on medium flame. Keep stirring continuously.

Fry the brinjal cubes until golden.

Take out the fried brinjals on a paper napkin to absorb excess oil.

Pour mustard oil in a heavy and wide cooking pan.

Mix all the dry spices with 2 tbsp water and keep aside.

Now add green cardamom and asafoetida in hot oil and when the cardamom starts crackling, add the spice mixture to it.

Stir it and then add whipped curd. Keep stirring it continuously to prevent the curd from curdling.

When it starts boiling, add the fried brinjal pieces. Cook on medium flame for about 5-6 minutes.

When it starts thickening and the brinjal pieces become soft, then understand that it is cooked. Serve it hot with roti or boiled rice.
