1 cup gram flour
1 teaspoon sugar
1 teaspoon salt
1 tbsp refined oil
1 teaspoon mustard seeds
3/4 cup water
1 tablespoon lemon juice
3/4 teaspoon baking soda
15 curry leaves
Step 1 Prepare the dhokla batter and let it ferment for 1-2 hours.
To make this easy Khaman Dhokla recipe, take a large mixing bowl and add gram flour, salt, water, lemon juice and baking soda. Mix all these ingredients well. Let the batter ferment for 1-2 hours. If you are making it during winter season, it may take more time. Meanwhile, add boiled water to the steamer and grease the vessel with oil.
Step 2 Cook the batter in Idli/Dhokla cooker for 15-20 minutes
Pour the Dhokla batter into a greased vessel and cook in a steamer on low flame for 15-20 minutes. Check the dhokla after 15 minutes by inserting a knife inside it. If the knife comes out clean, remove it from the stove. Let the dish cool and then cut into squares.
Step 3 Prepare the tadka
For tempering, heat oil in a pan on medium flame. When the oil becomes hot enough, add mustard seeds, curry leaves and chopped green chillies. Add 1/2 cup water in the pan and let it boil. After 2-3 boils, reduce the flame and squeeze 1/2 lemon, add sugar and green coriander. If you like more spiciness, you can also add some finely chopped green chillies. Step 4 Serve Nam Khaman Dhokla with Fafda and Jalebi
Switch off the flame and pour tadka over the dhokla and sprinkle coconut powder over the dish.
