Ingredients

For Khandvi Batter

  • 1 cup besan
  • 1 cup curd
  • 3 cups water
  • 1 tsp ginger-green chilli paste
  • ¼ tsp turmeric
  • Salt to taste
  • 1 tsp oil

For Tempering

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • A pinch of asafoetida
  • 8–10 curry leaves
  • 2 chopped green chillies (optional)

For Garnish

  • Fresh coriander, finely chopped
  • Fresh grated coconut (optional)

How to make:

  1. Take a large bowl and add besan, curd, ginger-garlic paste, water, turmeric and salt and mix to form a smooth batter.
  2. Grease a deep steel vessel with oil and pour batter into it.
  3. Place the container in a pressure cooker with about 2 cups of water at the base. Cook for 2 whistles.
  4. Whisk the batter well and roll it smoothly to form Khandvi.
  5. Once it cools, cut long strips and gently roll them into tight, elegant spirals.
  6. Heat oil in a small pan. Add mustard seeds, sesame seeds, asafoetida, curry leaves and green chillies. Let it crackle.
  7. Splash the fragrant tempering over the rolled khandvi pieces, allowing flavours to seep in beautifully.
