However, many people complain that the kheer made at home is not as thick and creamy as the one in the market or restaurant.

Actually, to make perfect kheer, not only the ingredients but also the right way of cooking it is very important. If the milk is cooked for the right time and the rice is prepared in the right way, then delicious kheer like halwai can be made at home also.

Ingredients required to make Creamy Kheer

  • 1 liter full cream milk
  • 50 to 60 grams basmati or short grain rice
  • 4 to 5 tablespoons sugar
  • 4 to 5 cardamoms
  • some saffron strands
  • 10 to 12 almonds (chopped)
  • 8 to 10 cashews
  • 1 tbsp pistachios
  • some raisins
  • Additional dry fruits for garnish

The secret to giving kheer a restaurant taste

The real taste of kheer is hidden in full cream milk. The more the milk cooks on low flame, the thicker and tastier the kheer becomes. Additionally, saffron, cardamom and dry fruits enhance its taste manifold.

Make perfect creamy kheer like this

First of all, wash the rice thoroughly and soak it in water for 20 to 30 minutes.

After this, add full cream milk in a heavy bottomed vessel and boil it. Keep stirring the milk continuously so that it does not stick to the bottom.

Now put the soaked rice in milk and let it cook on low flame. Keep stirring occasionally so that the rice melts well and the milk starts thickening.

When the milk reduces by about one-third and the rice is completely cooked, add sugar to it. After this add cardamom powder and saffron soaked in hot milk.

After cooking for a few more minutes, turn off the gas. Finally garnish with almonds, cashews, pistachios and raisins.

  • Do not add too much rice, otherwise the kheer may become very thick.
