The ‘Mexican rice’ and ‘paneer filling’ used in it makes it a complete meal. Ingredients: For burrito wrap: 2 large chapattis or tortillas. For filling: 200 grams of paneer (cut into cubes), boiled kidney beans, cooked rice. Vegetables: finely chopped onion, capsicum, tomato and sweet corn. Sauce and spices: Tomato ketchup, mayonnaise, Mexican seasoning (oregano/chili flakes), black pepper and salt. For garnish: grated cheese and finely chopped coriander. Step-by-Step Recipe: Step 1: Toss the cheese and vegetables. Heat some oil or butter in a pan. Add chopped onion, capsicum and corn to it. After lightly frying, add paneer cubes and boiled kidney beans. Add salt, pepper and Mexican seasoning on top and cook for 2 minutes. Step 2: Prepare Mexican Rice Add a little tomato sauce and oregano to leftover or freshly cooked rice and fry it lightly. This gives the burrito an authentic Mexican taste.
