1/4 cup masoor dal
2 medium sized chopped onions
6 chopped garlic cloves
3 tbsp chopped mint leaves
1/4 cup ghee
2 seedless, halved green chillies
1 tsp red chilli powder
2 tbsp tamarind paste
3 medium sized chopped brinjals/eggplant
2 tbsp chopped coriander leaves
2 medium sized chopped tomatoes
1/4 cup toor dal
1 inch chopped ginger
3 tbsp chopped dry fenugreek leaves
2 pinches of salt
10 black peppers
1/2 tsp turmeric
2 tbsp garam masala powder
100 grams chopped pumpkin
1 large chopped potato
5 cups water
Step 1 Soak the lentils and fry the onion, garlic and ginger
Dhansak Mutton is a must try and it is very easy to prepare. Here's an easy way to make this delicious recipe. Clean, wash toor dal and masoor dal and soak in two cups of water for half an hour. Next, cut the mutton into pieces and heat ghee in a pan on medium flame. When the ghee becomes hot enough, add chopped onion and fry until it turns golden. Add chopped ginger-garlic to the pan and fry them for about a minute until the smell of raw garlic goes away
Step 2 Add mutton and spices
Next, add the mutton pieces to the pan and stir well, continue cooking until the mutton pieces turn light brown for about 5-10 minutes. Then, add black pepper, green chilli, turmeric powder and red chilli powder to the pan and mix once again.
Step 3 Add soaked dal, vegetables, salt and water
Drain off excess water and add soaked toor and masoor dal and mix all the ingredients well. Next, add chopped pumpkin, potatoes and brinjal along with salt and three cups of water to the pan and boil them. Close the lid of the pan and cook for ten minutes.
Step 4 Add fenugreek, mint and tomatoes
Then, add fenugreek and mint leaves to the pan and stir once. Finally, add chopped tomatoes to the pan and close the lid once again. Let the mutton cook on medium flame, it may take 30-45 minutes.
Step 5 Add garam masala to mutton, mash the vegetables
When cooked, turn off the flame and take out the mutton pieces from the pan and keep them in a large bowl. Next, add garam masala powder and tamarind pulp to the cooked vegetables. Stir well and mash the vegetables.
Step 6 Garnish the Dhansak Mutton and serve!
Now, pour this mashed vegetables into a large bowl and add the mutton pieces, garnish with chopped coriander leaves and cook for 5 minutes. Enjoy homemade Dhansak Mutton with Naan or Paratha of your choice.
