Quinoa Khichdi
If you want to eat something light and rich in protein during Mahashivratri fast. So it can be best for you to eat quinoa instead of buckwheat. This is absolutely easy to make. To use quinoa during fasting, wash it and roast it. Now add coarse powder of roasted peanuts, green chillies and rock salt to it and cook it in the cooker. This khichdi is not only quick to prepare, but also does not make the stomach heavy. This is also a perfect option for diabetic patients.

Samak Rice
Samak rice i.e. Makhana rice is becoming quite popular during fasting. Tasty and healthy risotto can be made by giving it an Italian twist. Add cumin and green chillies in desi ghee, add boiled potatoes to it and fry. Now add soaked samak rice to it and cook on low flame. Garnish by adding green coriander and cashew nuts on top. For this, fry the makhanas in ghee and fry Rajgira or water chestnut flour separately. Then add finely chopped coconut, cardamom powder and jaggery to it and make laddus.
