Sabudana Khichdi: As soon as the holy festival of Mahashivratri arrives, along with devotion, preparation of special dishes for the fast also starts in the homes. The most liked dish in fruit food is Sabudana Khichdi, but often it becomes sticky or wet. If you also want your khichdi to be fluffy and grainy, then it is very important to get the method right.

- 1 cup sago
- 2 medium boiled potatoes (cut into cubes)
- 1/2 cup roasted peanuts (coarsely ground)
- 2 green chillies (finely chopped)
- 1 tsp cumin
- 8-10 curry leaves (optional)
- rock salt as per taste
- 1/2 tsp black pepper powder
- 1 tbsp desi ghee or peanut oil
- 1 tablespoon lemon juice
- finely chopped coriander
How to make Sabudana Khichdi
Sabudana Khichdi is a fruit dish full of taste. The most important step to prepare it is to soak the sago. First wash the sago thoroughly to remove excess starch. Then put it in a vessel and add just enough water that the sago gets submerged. Keep it covered for 4-5 hours or overnight.
When the grains press easily with fingers and do not stick together, then understand that the sago is ready. Now heat ghee or peanut oil in a pan. Add cumin seeds in it and let it crackle. Now add green chillies and curry leaves and fry lightly.
After this add boiled potatoes and let them become light golden for 2-3 minutes. This will increase the crispiness and taste of the khichdi. Now add soaked sago in the pan. Also add coarsely ground peanuts, rock salt and black pepper. Keep the gas flame low and keep stirring gently.
If you stir too much, the grains may break, so be careful. In 3-4 minutes the sago will start appearing transparent which is a sign that the khichdi is ready. Finally, turn off the gas and add lemon juice and green coriander. If you want, you can also add some roasted peanuts on top.
