How to prepare papad base?

First of all, take urad dal flour in a big vessel. Add papad khar, salt, black pepper powder and asafoetida and mix well. Now add water little by little and knead a hard but smooth dough. Cover the dough with cotton or muslin cloth and keep it aside for at least 2–3 hours. This improves the texture of the flour and the papads do not tear while rolling.

Easy way to roll papad

  • Knead the set dough lightly again.
  • Apply some oil on your hands and make small balls.
  • Keep the balls covered so that they do not dry out.
  • Roll out the papads thinly with the help of a rolling pin or flatten them by pressing them with a flat utensil.

Spread the prepared papads separately on a clean cloth or plastic sheet and dry them thoroughly in the sun.

How to store papad?

When the papads are completely dry and there is no moisture left in them, store them in an airtight container. If needed, fry them in oil or can also eat them by roasting them directly on gas.
