If you want to eat something hot, light and full of nutrition during the rainy season, then ragi soup can be a great option. It is not only tasty, but is also considered good for digestion. Taking it in dinner can also be a healthy choice. The special thing is that it takes only 20 minutes to make.
Ingredients to make Ragi Soup
2 tbsp ragi flour
1 tsp ghee or olive oil
2–3 garlic cloves (finely chopped)
1 small onion (finely chopped)
1 small carrot (grated)
2 tbsp sweet corn
1 cup milk (optional)
2 cups vegetable stock or water
salt as per taste
half teaspoon black pepper powder
a little roasted cumin powder
green coriander for decoration
Ragi Soup Recipe
First of all, mix ragi flour well in a bowl by adding some water. Make sure there are no lumps in it.
Now heat ghee or olive oil in a pan. Add garlic and onion to it and fry until it becomes light golden. After this add grated carrots and sweet corn and cook for 2-3 minutes.
Now add vegetable stock or water to the pan and let it boil. After this, slowly add the prepared ragi solution and keep stirring continuously, so that the soup becomes smooth.
If you want to make the soup more creamy, you can also add milk to it. Now add salt, black pepper and roasted cumin powder and cook on low flame for 5-7 minutes.
When the soup becomes thick and cooked well, turn off the gas. Add green coriander on top and serve hot.
