Material

Boiled potatoes – 5-6
Oil – 4 spoons
Kasuri Methi – 2 spoons
Green Coriander – 3 tbsp
Cumin – 2 teaspoons
Red chilli powder – half teaspoon
Coriander powder – 2 teaspoons
Turmeric powder – 1 teaspoon
Garam masala – 1 teaspoon
Green chilli – 3
Finely chopped ginger – 1 inch
Finely chopped onion – 2
Finely chopped tomatoes – 3
salt to taste
Method
Wash the potatoes two to three times with clean water and boil them in the cooker. After they cool down, peel them and cut them into small pieces. Keep in mind that the potatoes should not be mashed too much, but should remain in big cut pieces.
Put oil in the pan and heat it. After it gets heated well, add cumin seeds and crackle. When cumin seeds start crackling, add green chillies and ginger and fry for a while. Add onion and fry till it becomes light golden.
Now add tomatoes to it and let it cook until the tomatoes become soft. Once the tomatoes are cooked, add red chili powder, turmeric powder and coriander powder. Mix all these well and fry for 2-3 minutes, so that the spices get cooked properly and a good aroma starts coming out.
Add the chopped potatoes to the pan and mix well with the spices. Let it cook for 6-8 minutes on medium flame, so that the potatoes absorb the spices properly.
Now add Kasuri Methi to it and mix well. After this add garam masala and mix again.
Take the hotel like kadhai potatoes are ready. Serve it with hot naan, paratha, roti or rice.
