You must have heard the name of Pahari Noon, which is made by women in the mountains. Green garlic, coriander and other spices are added to this salt to give it a unique taste. Its special thing is that it does not spoil for many months.

Pahari Loon, also known as Pisyun Loon, has been prepared by women for a long time. Now it is being sold in local markets. Tourists buy it from the mountains. Due to its increasing popularity, it is now being exported internationally also. Every family has its own recipe, but you can make it with some simple ingredients. This Noon is used on vegetables, raita and salad, which further enhances the taste of the food.

Ingredients for making Pahari Noon

To make Pahari Noon you will need the following ingredients:

  • Green Garlic: 1/2 cup
  • Green Coriander: 1/4 cup
  • Cumin: 2 tbsp
  • Dry coriander whole: 3 teaspoons
  • Mint: a handful
  • Garlic cloves: 6 to 7
  • Ginger: 1 to 1.5 inch piece
  • Green chillies: 5-6 (as per taste)
  • Salt: 1/2 cup

Pahari Noon Recipe

First wash and dry green garlic and coriander and then chop. Peel the garlic cloves and also peel the ginger. Remove the stalk from the green chillies. Now mix all the chopped ingredients with cumin, ginger and green chillies and grind them with salt. Note that it should not be a very fine paste.

It is better to make it in the traditional way on a colander, but if not, you can also use a mixer. Once completely prepared, store it in an airtight container.

Tips to increase shelf life

If you want to increase its shelf life, spread it on a plate and dry it thoroughly in the sun. When it dries completely, grind it in a mortar and pestle so that its quality is maintained. For quick preparation, you can also dry it in an air fryer or bake it for some time at 80 degrees Celsius.
