Ingredients to make Kabuli Chana Pulao
500 grams rice
300 grams chickpea
one spoon ginger paste
one spoon cumin
cinnamon
black cardamom
2 cloves
2 green chillies
one spoon green coriander
a spoonful of black pepper
one teaspoon turmeric
one spoon lemon juice
Desi Ghee/Oil
Salt
Complete recipe for making Kabuli Chana Pulao
- First of all, wash chickpeas thoroughly and soak them in water for 6-8 hours. Then, boil the chickpeas in a pressure cooker, add water. Boil for 3-4 whistles and then take out the gram and keep it aside.
- Wash basmati rice and let it soak in water for 15-20 minutes, then filter the water.
- Heat oil or ghee in a large pan. Add cumin, bay leaves, cinnamon, cloves and cardamom. Let them crackle well for 1-2 minutes.
- Now add chopped onion and fry until it turns golden. Then add ginger, garlic and green chilli and fry for a minute.
- Now add tomato and let it cook until it becomes soft. Now add turmeric powder, coriander powder, cumin powder and salt and mix well.
- Then add curd and mix it well with the spices. Let it cook for 2-3 minutes.
- Add boiled chickpeas to this mixture and mix well.
- Then add soaked rice and mix once again.
- Now add 2 cups of water and also add garam masala powder. Then cover the pan and let it cook on medium flame.
- When the water starts boiling, reduce the flame to low and let the rice cook for 10-15 minutes.
- When the rice is completely cooked, turn off the gas. Cover the pulao and keep it aside for a few minutes, so that its flavor gets absorbed well.
