Ingredients for making gravy
To make creamy gravy of pasta, red capsicum 1, medium sized tomatoes 2, cheese 100 grams (high protein), soaked cashews 12 to 15, boiled pasta water 2 tablespoons, handful of basil leaves.
Note these ingredients
Garlic 1 tbsp (finely chopped), Olive oil 1 tbsp, Red chilli powder 1½ tsp, Celery 1 tsp, Black pepper powder ½ tsp, Salt as per taste, Tomato ketchup 2-3 tbsp (approximately), Boiled pasta 1½ cups, Pasta water ½ cup (to balance the thickness), Bread (for serving).
High Protein Pasta Recipe
- First of all you have to grill red capsicum and tomato until they become light golden. After this, turn off the gas and let it cool down a bit.
- Now add cheese, soaked cashew nuts, basil leaves in the grinder jar and also add roasted tomatoes and capsicum.
- Add 2 tablespoons of pasta water to all the ingredients and grind it to make a smooth chutney. This is the base of your pasta and a treasure trove of nutrients.
- Heat olive oil in a pan. Add chopped garlic to it and fry until aroma comes out.
- Now you have to add prepared paste of paneer and cashew nuts in it. Cook it on medium flame for at least two to three minutes.
- Now take out the boiled pasta from water and mix it in the prepared gravy. Add chili flakes, celery, black pepper, ketchup, salt and remaining pasta water to it.
- Now mix well with a ladle until the creamy paste of spices and cheese coats the pasta well.
- Lastly you have to add some chopped basil leaves. If you want, you can garnish with Parmesan cheese while serving.

If you want to make a creamy chutney exactly like the restaurant, then while grinding the cheese-cashew nuts, capsicum and tomatoes, add pasta water little by little so that it gives the right texture to the paste in a balanced manner. Apart from this, if you do not eat onion and garlic then you can add chilli oil instead of garlic.
