Read Desk. During the summer season, people often prefer light, tasty and cooling food. If you too are bored of eating the same type of vegetables every day, then try this spicy dish of stuffed cucumber. Cucumber is usually eaten as a salad, but when it is stuffed with spices, its taste increases manifold.

Cucumber has a cooling effect, which cools the body in summers and is also beneficial for health. Let us know the recipe of stuffed cucumber.

Material

Cucumber- 4-5
Gram flour-2-3 spoons
Coriander powder- 1 teaspoon
Turmeric-½ teaspoon
Red chilli powder-1 teaspoon
Fennel powder-1 teaspoon
Salt – as per taste
Oil-2–3 spoons
Asafoetida-1 pinch
Cumin-½ teaspoon

Method

1- Wash and peel the cucumber and make a slit in the middle (do not cut completely). Mix gram flour, all the spices and salt in a bowl, add a little oil and mix.
2- Stuff this spice well inside the cucumber. Heat oil in a pan, add cumin and asafoetida in it.
3- Now add the stuffed cucumber and cook covered on low flame. Keep turning occasionally so that the vegetable gets cooked properly.
4- When the cucumber becomes soft and looks light golden, turn off the gas. Serve it with hot roti or paratha.
