Ingredients to make Crispy Corn Chaat
- 2 cups sweet corn
- 3-4 tbsp corn flour
- 2 tbsp rice flour
- salt as per taste
- 1/2 tsp black pepper powder
- 1/2 tsp red chilli powder
- 1/2 tsp chaat masala
- 1/2 tsp roasted cumin powder
- 1 finely chopped onion
- 1 finely chopped tomato (seeds removed)
- 1-2 green chillies finely chopped
- some green coriander
- 1 tablespoon lemon juice
- oil for frying
How to make Crispy Corn Chaat
Step 1: Boil the Corn First
Boil the sweet corn lightly for 3-4 minutes. After this, take them out in a sieve and let the excess water dry completely. The drier the corn, the crispier it will become.
Step 2: This is the most important trick
Add corn flour and rice flour to the boiled corn and coat it well. It is the rice flour that gives the extra crunch to the corn. If there is more moisture in the corn, you can add a little more corn flour.
Step 3: Fry properly
Heat oil well in pan. Now fry the corn on medium to high flame until it becomes golden and crispy. Do not add too much corn at once as it may stick together.
Step 4: Prepare the Chaat
Add onion, tomato, green chilli, green coriander, chaat masala, black pepper, roasted cumin and lemon juice to the fried corn and mix gently.
Pay special attention to these things
- After boiling the corn, dry it completely.
- Be sure to add rice flour.
- The oil should be well heated.
- After making the chaat, serve it immediately, so that the crunch remains.
- Remove the seeds from tomatoes, this will prevent the chaat from getting soggy quickly.
