Mama’s Spring Rolls
Ingredients
- Spring roll wrappers – 12
- Shredded cabbage – 1 cup
- Carrot (julienned) – 1 medium
- Capsicum (thinly sliced) – ½ cup
- Bean sprouts – ½ cup
- Garlic – 2 cloves (finely chopped)
- Soy sauce – 2 tbsp
- Vinegar – 1 tbsp
- Salt & pepper – to taste
- Oil – for frying
- Cornflour paste (cornflour + water) – for sealing
Method
- Prepare filling
- Heat 1 tbsp oil in a pan.
- Add garlic, sauté for a few seconds.
- Add cabbage, carrot, capsicum, and bean sprouts. Stir-fry for 2–3 minutes.
- Season with soy sauce, vinegar, salt, and pepper.
- Let the mixture cool completely.
- Fill and roll
- Place a spring roll wrapper on a flat surface.
- Add 2 tbsp of filling near one edge.
- Fold sides inward, then roll tightly.
- Seal the edge with cornflour paste.
- Fry
- Heat oil in a deep pan.
- Fry rolls until golden brown and crisp.
- Drain on paper towels.
- Serve
- Enjoy hot with sweet chili sauce or ketchup.
Tips
- You can add shredded chicken, prawns, or mushrooms for variation.
- Bake instead of deep-frying for a healthier option.
- Prepare filling ahead of time and refrigerate for quick assembly.
