Mama’s Spring Rolls

Ingredients

  • Spring roll wrappers – 12
  • Shredded cabbage – 1 cup
  • Carrot (julienned) – 1 medium
  • Capsicum (thinly sliced) – ½ cup
  • Bean sprouts – ½ cup
  • Garlic – 2 cloves (finely chopped)
  • Soy sauce – 2 tbsp
  • Vinegar – 1 tbsp
  • Salt & pepper – to taste
  • Oil – for frying
  • Cornflour paste (cornflour + water) – for sealing

Method

  1. Prepare filling
    • Heat 1 tbsp oil in a pan.
    • Add garlic, sauté for a few seconds.
    • Add cabbage, carrot, capsicum, and bean sprouts. Stir-fry for 2–3 minutes.
    • Season with soy sauce, vinegar, salt, and pepper.
    • Let the mixture cool completely.
  2. Fill and roll
    • Place a spring roll wrapper on a flat surface.
    • Add 2 tbsp of filling near one edge.
    • Fold sides inward, then roll tightly.
    • Seal the edge with cornflour paste.
  3. Fry
    • Heat oil in a deep pan.
    • Fry rolls until golden brown and crisp.
    • Drain on paper towels.
  4. Serve
    • Enjoy hot with sweet chili sauce or ketchup.

 Tips

  • You can add shredded chicken, prawns, or mushrooms for variation.
  • Bake instead of deep-frying for a healthier option.
  • Prepare filling ahead of time and refrigerate for quick assembly.
