Marcello Tulli's Sticky Toffee Banana Pancakes Recipe

15 grams caster sugar
150 grams flour
2 eggs
250 ml milk
2 tbsp sunflower oil
125 grams low fat cream cheese
200 grams banana, chopped
50 grams light brown sugar
150 ml single cream
50 grams butter
3 drops vanilla essence Place the caster sugar and flour in a bowl, make a well in the centre.
Crack the eggs into the well and begin mixing the ingredients together using a whisk or wooden spoon. Gradually add the milk and beat until smooth – ask the children to beat the mixture until the mixture is completely smooth. If their hands get tired, take a rest and start again after a few minutes.
Heat oil in a small frying pan, drop a teaspoon of pancake batter into the pan. Tilt the pan to coat the entire surface and cook for 2-3 minutes.
Flip the pancakes and cook for 1 more minute – if you dare, have the kids flip themselves.
Place on a plate and repeat the process until all the batter is used up.
Place the pancakes on a board and gently spread cream cheese in the center of each. Top with a few banana slices – another great activity the kids can get involved in.
Fold each pancake in half and then fold in half again to form a triangle shape. Set it aside while you make the sauce – compare who makes the neatest triangles!
For the toffee sauce, put the sugar in a heavy-bottomed saucepan and heat until the sugar melts and turns golden brown. Then, add cream, butter and vanilla essence and beat.
Bring to a boil slowly while stirring with a wooden spoon. Remove from flame.
Drizzle some sauce over the pancakes and serve.
