Mini Mexican Platter Recipe

2 onions

2 tbsp corn

1 1/2 cups boiled black beans

1/4 cup coriander

1 tablespoon lemon juice

1 tablespoon vegetable oil

1/2 cup coriander leaves

salt as required

1 cup boiled rice

10 garlic cloves

1 tbsp green onion

1 chopped jalapeno

1/2 tsp cumin powder

2 tbsp water

1 medium sized tomato

1 chopped avocado

Juice of 1 lemon as required

1 teaspoon chili flakes

Step 1 Make the Black Bean Dip

Heat 1 tablespoon oil in a pan, sauté 1 chopped onion, 4 garlic cloves and jalapeno until soft. Now add boiled black beans, onion, garlic cloves, jalapeno chilli, coriander, ground cumin and 2-3 tbsp water in a blender. Blend to make a thick paste. Finally, add 1 tablespoon lemon juice and mix. Take out the dip in a bowl.

Step 2 Make the Guacamole Dip

First of all, put 1 chopped onion, 4 garlic cloves, coriander in a mortar and grind with a pestle until you get a paste. Now add avocado, rock salt and again grind it for a while until you get the consistency of guacamole. Finally add juice of one lemon and chopped tomatoes.

Step 3 Prepare the Rice

Fry some cooked white rice with 2 cloves of chopped garlic, 2 tablespoons of corn, 1 teaspoon of chili flakes, salt to taste and some green onions for garnish.

Step 4 Arrange and Serve

First add the black bean dip, then the rice, and then the guacamole dip and arrange everything on a plate. Serve and enjoy on a beautiful Mexican platter.
