Mumbai Street-Style Pav Bhaji Recipe
Ingredients for Bhaji
- 1 tbsp + 1 tbsp butter
- 3 tomatoes, finely chopped
- ¼ cup peas / matar
- ½ capsicum, finely chopped
- 2 potatoes, boiled and mashed
- 1 tsp salt
- 1 tsp + ¼ tsp Kashmiri red chilli powder / lal mirch powder
- ¼ tsp turmeric / haldi
- 1 tsp + ½ tsp pav bhaji masala
- 1 tsp + 1 tsp kasuri methi / dried fenugreek leaves
- 2 tbsp + 1 tbsp coriander leaves, finely chopped
- 1 tsp ginger-garlic paste
- 1 onion, finely chopped
- Juice of ½ lemon
- 3 drops red food colouring (optional)
- Water, to adjust consistency
Ingredients for Toasting Pav
- 8 pav / bread rolls
- 4 tsp butter
- ½ tsp Kashmiri red chilli powder / lal mirch powder
- ½ tsp pav bhaji masala
- 4 tsp coriander leaves, finely chopped
How to Prepare Mumbai Street-Style Pav Bhaji
- To prepare the bhaji, heat 1 tbsp butter in a large kadai (wok) and add the vegetables. Allow them to cook thoroughly and then mash well.
- Add 1 tsp chilli powder, 1⁄4 tsp turmeric, 1 tsp pav bhaji masala, 1 tsp kasuri methi, and 2 tbsp coriander leaves.
- Heat another tbsp of butter and add ¼ tsp chilli powder, ½ tsp pav bhaji masala, 1 tsp kasuri methi, 1 tbsp coriander leaves, 1 tsp ginger-garlic paste, and the finely chopped onion. Sauté well and then add the juice of half a lemon.
- Add 3 drops of red food colouring (optional) and mix well.
- Finally, boil and mash the mixture for 5 minutes, adjusting the consistency as needed.
