1 kilogram mushroom

90 grams onion

1 1/2 teaspoon black pepper

2 teaspoons parsley

2 teaspoons parsley

2 teaspoons virgin olive oil

15 grams basil

5 teaspoons white wine vinegar

5 spoons butter

10 cloves garlic

salt as required

2 teaspoon chives

350 grams brinjal/eggplant

300 grams tomato

1/4 cup orange juice

Step 1

To prepare this delicious dish, first wash the brinjal and cut it into 5 slices. Then, take a medium sized pan and place it on medium flame. Now, add some olive oil to the pan and heat it and grill the brinjal slices well from both the sides. Once done, reserve the grilled eggplants in virgin olive oil for future use.

Step 2

Now, to prepare the tomato chutney, take a medium-sized saucepan and place it on medium-low flame. Then, add half the amount of butter in the pan and let it melt completely. After that, add 30 grams onion and 4 garlic cloves to the pan and fry on low flame till glossy. Next, add tomatoes, basil and sauté for another 5-6 minutes. Then, add orange juice, vinegar to the pan and stir. Let the mixture boil until it reduces to half and keep stirring occasionally. Then, add salt and pepper as required and mix well. Once cooked, turn off the flame and keep aside for a while.

Next, take another medium sized pan and place it on medium-low flame. Then, add the remaining butter to the pan and let it melt completely. Now, add remaining onion and garlic and sauté until translucent. Then, add the mushrooms and fry until the moisture evaporates completely. Now, add oregano, chives and parsley to the mixture. Also, add salt and pepper as required. Mix well and then keep aside for a while.

Finally, form a tower by placing the first half of the cooked mushrooms (Step 3) into a serving dish. Then, place the eggplant slices (Step 1) on top of the mushrooms. Now, place the remaining half of the cooked mushrooms on top of the eggplant layer. Spread some prepared tomato chutney (step 2) around the tower. Also, garnish with turnip and orange julienne. serve hot
