But since buckwheat flour is gluten-free, making its puris is a bit challenging. If your puris also absorb oil or become hard like papad when cooled, then this special recipe and secret tips will be very useful for you. Ingredients to make soft buckwheat puris: Buckwheat flour: 2 cups Boiled potatoes: 3-4 (mashed) Rock salt: As per taste Finely chopped green chillies and green coriander Hot water: As required (for kneading) Peanut oil or ghee (For frying) Mother-in-law’s ‘secret’ method (The Hidden Trick): Often people knead buckwheat flour with cold water, due to which it becomes hard. The secret is to add grated boiled potatoes to the dough and use lukewarm water to knead the dough. Potato provides binding and moisture to the dough, making the puris soft. Recipe: Step-by-Step Guide Prepare the mixture: Sieve the buckwheat flour in a bowl. Add grated potatoes, rock salt, chilli and coriander to it. Knead the dough: Rub the flour thoroughly with the potatoes first without adding water. Now slowly add lukewarm water if needed and knead a stiff dough. (Keep in mind, buckwheat flour becomes loose when stored, so use it immediately). Make balls: Apply some ghee on your hands and break small balls. Method of rolling: Instead of rolling the buckwheat flour with the entire rolling pin, spread it by pressing it with the palms of your hands or by placing it between a plastic sheet. This will prevent the puri from breaking. Fry: Heat ghee in a pan. When the ghee gets heated well, fry the puris on medium flame till they turn golden. Expert Tips: Avoid absorbing oil: Do not keep the flame too low while frying the puris, otherwise the puris will absorb the ghee. Freshness: Always grind or buy the buckwheat flour freshly, because it becomes bitter when it gets old.
