Ingredients for making Spinach Kachori-

Flour- 3 cups
Semolina- half tablespoon
Gram flour – one tablespoon
Spinach- 350 grams
Celery- half teaspoon
Ghee
Asafoetida – a pinch
Red chilli powder – half teaspoon
Fennel – half teaspoon
Garam masala- half teaspoon

To make Spinach Kachori, first wash the spinach thoroughly and cut it. Now heat water in a big vessel and put it on gas. When the water starts boiling, add chopped spinach into it. Let the spinach cook for a while, turn off the gas for 5-7 minutes and strain the spinach. Keep in mind that spinach should not be cooked too much. Spinach turns black if cooked too much. Green spinach is good for spinach kachori.

After boiling the spinach, cool it and then put it in the mixer and make a paste. Now to knead the dough, take out the flour in a bowl and mix semolina and gram flour in it. Along with this, add salt, celery, fennel, garam masala, red chilli, asafoetida and mix.

Now add two spoons of ghee and knead the flour well and add water little by little and knead the dough. Leave the dough for a while. Now take out small balls from it and roll them in the shape of shortbread and then put them in hot oil and fry them. Hot spinach kachoris are ready.
