Amla, rich in Vitamin C, is not only beneficial for health, but including it in the diet in winter is very beneficial. Amla is consumed in the form of juice, pickle, chutney, or murabba, but have you ever tried the delicious and spicy Amla vegetable? This vegetable is not only healthy, but is so tasty that even children will like it.
So let’s know the recipe of this easy and delicious Amla vegetable.
Ingredients required to make Amla curry
- Amla: 6-8 (medium sized)
- Fenugreek seeds: 1/2 teaspoon
- Mustard: 1/2 tsp
- Cumin: 1/2 tsp
- Fennel: 1/2 teaspoon
- Asafoetida: 1 pinch
- Green chilli: 1 (finely chopped)
- Turmeric powder: 1/2 teaspoon
- Coriander Powder: 1/2 tsp
- Vegetable masala: 1/2 tsp
- Garam Masala: 1/2 tsp
- Salt: as per taste
- Mustard oil: 2 teaspoons
Recipe to make delicious Amla vegetable
1. Boil Amla:
- First of all wash the gooseberries thoroughly.
- Heat water in a vessel and add gooseberry to it and boil it.
- Keep in mind that the gooseberries should neither be too raw nor too ripe.
- When the gooseberries start bursting easily, turn off the gas.
- When it cools down, remove the seeds from the gooseberries and separate the pulp.
2. Prepare the masala:
- Heat a pan on gas.
- Add fenugreek seeds, mustard, cumin and fennel and fry lightly.
- Cool the roasted spices and grind them finely in a mixer without adding water.
3. Start preparing the vegetables:
- Heat 2 teaspoons mustard oil in a pan.
- After the oil is hot, add asafoetida and finely chopped green chillies.
- Immediately add the roasted masala and fry for 1-2 minutes.
4. Mix Amla and Spices:
- Add boiled gooseberries to the roasted spices.
- Mix it well and fry for 2 minutes.
- Now add turmeric powder, coriander powder, garam masala, vegetable masala, and salt as per taste.
- Mix the spices well in the amla.
5. Cook Vegetables:
- Cover the pan and let it cook on low flame for 2-3 minutes.
- When the spices mix well with the amla and aroma starts appearing, turn off the gas.
How to serve:
Serve this delicious and spicy dry curry with hot roti, paratha, or puri. Apart from being healthy, this vegetable is perfect for winters.
Notes and Tips:
- You can also make this vegetable with less spices.
- If you want more sourness in taste then you can also add a little lemon juice.
- Groundnut oil can also be used instead of mustard oil.
