It is made from green moong dal, hence it is also called ‘Moong Dal Dosa’. The best thing about it is that its solution does not need to be kept for hours for fermentation. Ingredients required to make Pesarattu: Whole green moong dal: 1 cup (soaked for 4-5 hours) Rice: 2 spoons (to bring crispiness) Ginger: 1 inch piece Green chillies: 2-3 (as per taste) Cumin: 1 teaspoon Salt: as per taste Onion: finely chopped (For topping) Oil or ghee: For baking Easy method to make (Step-by-Step Method) Grind pulses: Wash soaked moong dal and rice with clean water. Now prepare a fine and smooth paste by adding pulses, rice, ginger, green chillies, cumin and some water in the mixer. Set the batter: Take out the prepared batter in a big vessel. Add salt to it as per taste. The consistency of the batter should be like dosa batter—not too thick, not too thin. Prepare the pan: Heat a non-stick pan. Sprinkle a few drops of water on it and wipe it with a cloth. Now reduce the flame to medium. Spread Pesarattu: Pour a tablespoonful of the batter in the center of the pan and spread it thinly by rotating it. Topping and cooking: Add some oil or ghee on the edges of the dosa. Now sprinkle some finely chopped onion and green coriander on top. Let it get crispy: When the lower surface becomes golden and crispy, turn it (or cook it well from one side only).
