Pesto Panini Recipe

Life Style: Delicious Mushroom Sandwiches, this Pesto Panini is a healthy sandwich recipe and ideal for breakfast or a quick meal. This is a great breakfast recipe made with mushrooms, red peppers and zucchini. Try this easy recipe for a picnic or road trip.

1/2 teaspoon virgin olive oil

30 grams washed and dried mushrooms

1 panini bread

1 pinch salt

4 pieces lettuce loose-leaf

20 grams roasted red chilli

2 tbsp pesto sauce

30 grams washed and dried zucchini

Step 1

To make this healthy sandwich, coat red peppers with olive oil and salt and roast in the oven at 160 degrees Celsius until the skin is charred. When it cools down, remove the peel.

Step 2

Then, clean the zucchini and mushrooms and chop both. After cutting them, grill them with olive oil and salt.

Now, cut the panini bread lengthwise into two pieces and apply a tablespoon of pesto sauce on each side.

Step 4

Spread lettuce leaves on one side of the bread and make a layer of chopped zucchini and mushrooms with roasted red peppers, top with crumbled feta and close the sandwich with another slice of bread.

Step 5

Now, grill this sandwich for about 3-4 minutes and serve immediately to enjoy its taste.
