Who created Jhalmuri desi spicy dish?
When Prime Minister Narendra Modi, who was on a tour of West Bengal, tasted Kolkata’s famous street food Jhalmuri, this desi snack once again came into discussion. Jhalmuri, made with light puffed rice, aroma of mustard oil and spicy taste of spices, has been the identity of Bengal for a long time.
Jhalmuri is believed to have originated in Kolkata, where laborers from Bihar gave a new look to their traditional puffed rice snack with local flavour. With time this street food became so popular that after 1947 it reached Bangladesh, where even today people eat it with great enthusiasm.
History of Jhalmuri
Jhalmuri’s roots are believed to be linked to old Kolkata (then Calcutta), when the city was becoming a major commercial and administrative center during the British era. At that time, laborers and migrants from Bihar brought with them traditional snacks made of puffed rice, which they gave a new shape according to the local taste. Gradually, things like mustard oil, spices, onion and green chillies started being added to it, due to which its taste became even more special.

How did Jhalumri reach Bangladesh?
When street food culture increased in cities in the beginning of the 20th century, the popularity of Jhalmuri also increased rapidly. During the Second World War, it became a cheap and filling option and reached more people. After the partition of 1947, people of the Muslim community of Bihar took it to Bangladesh, where it is equally popular even today. With time, this snack also reached countries like Britain, where it is liked as Indian street food.

How is Jhalmuri made?
- The process of making Jhalmuri is very easy, but its taste lies in its special preparation. First of all, puffed rice (puffed rice) is taken in a big vessel.
- Finely chopped onion, tomato, small pieces of boiled potato, green chilli and coriander are added to it. After this, salt, chaat masala, red chilli and especially mustard oil are added, which is its identity.
- Finally, lemon juice is added to it and mixed well, so that the taste is equal in every mouthful.
- It is usually served in paper cones (thonga), which gives it the real taste of street food.
