1. Necessary Ingredients
Fresh Green Peas: 500 grams (peeled)
Mustard Oil: 1 cup
Mustard (yellow or black): 3 tbsp (coarsely ground)
Fennel: 2 tbsp (coarsely ground)
Nigella: 1 tbsp
Turmeric Powder: 1 tbsp
chilli powder: 2 tbsp (to taste)
Asafoetida: half teaspoon
Salt: as per taste
Vinegar or lemon juice: 2 tbsp (to last longer)
2. Simple method of making (Step-by-Step Instructions)
Step 1: Prepare the Peas
First of all wash the peas. Now boil water in a vessel, add peas in it and ‘blanch’ it for 2-3 minutes only. Keep in mind that the peas should not be cooked too much. After this, filter the peas and spread them on a cotton cloth and dry them under a fan for 1 hour so that the moisture is completely removed.
Step 2: Heat the oil
Heat mustard oil in a pan until smoke starts coming out from it. After this, turn off the gas and let the oil cool down a bit.
Step 3: Add spices
Add asafoetida, nigella, mustard, fennel, turmeric and red chili powder in lukewarm oil. Now add dried peas and salt and mix well.
Step 4: Add Preservative
Add vinegar or lemon juice to the pickle to give it sourness and to preserve it for a longer period. Your instant pea pickle is ready!
3. Correct way to store
After the pickle cools completely, fill it in a dry and clean glass jar. By keeping it in sunlight for 1-2 days, its taste improves further.
