To keep jaggery safe, it is most important to protect it from air and moisture. Let us know some special tips to keep it fresh for a long time: 1. The choice of container is most important. Avoid using plastic containers to store jaggery. The taste of jaggery kept in plastic changes quickly and it starts melting. The best way is to keep the jaggery in a glass jar or a steel can. Steel or glass are better at keeping moisture out.2. The magic of paper layersWhenever you keep the jaggery in the box, do not pour it directly. First of all, wrap the jaggery pieces separately in brown paper or newspaper pieces. If you don’t have one, put two-three layers of tissue paper on the bottom and top of the box. These papers absorb all the excess moisture of the jaggery and the jaggery remains hard for years.3. The miracle of a little ‘clove’ is a very old and effective method. Put 4-5 cloves in the box in which you have kept the jaggery. Due to the smell of cloves, ants do not get into jaggery and it also helps in controlling moisture. It sounds like a small thing, but the biggest reason for spoiling of jaggery is wet spoon or hands. Even if a little water gets into the container even once, the entire jaggery will become a victim of fungus. Always use a dry spoon. My one advice: If you bring jaggery in large quantities from the market, dry it in the sun for 1-2 hours and then cut it into small pieces and keep them in different jars. Due to this, the entire jaggery does not come in contact with air again and again and remains fresh for a long time. So, keep these small things in mind while bringing jaggery next time.
