Putharekulu Recipe

Life Style: Putharekulu is a popular South Indian sweet known for its paper-thin texture. The method of making it is quite interesting, because to make it, a handkerchief is dipped in a liquid solution and spread on an inverted pan. The napkin is then quickly removed so that a stain of the solution remains on the embroidery. The hot frying makes it paper thin and crisp. Later, ghee and sugar are sprinkled on it and the putharekulu is folded into a roll. You can also add ground dry fruits to it before folding to make it tastier. So, do try this exotic South Indian recipe at least once.

100 grams rice

4 tbsp sugar

50 ml water

4 spoons ghee

Step 1 Soak the Rice

First of all, wash the rice 2-3 times and soak it in water for at least 2 hours.

Step 2 Grind to make slurry

Now use a wet grinder, add rice soaked with water. Grind until the solution becomes completely soft.

Step 3 Heat the pot

Now place a vessel upside down on the stove and let it heat.

Step 4 Use cloth to make putharekulu

Now mix, add more water to make the solution thinner. Now dip a cloth in it thoroughly. The size of handkerchief is best suited for this purpose.

Step 5 Make the Rice Sheet

Now apply ghee on the back side of the pot/pan. Spread the dipped handkerchief on the vessel and remove it quickly. With this, a thin layer of the solution will be applied on the pan.

Step 6 Remove when crisp

The sheet will become crisp in no time. Take it out when it becomes crisp. Repeat the same process to make putharekulu.

Step 7 Softening the Sheet

Now take two sheets of rice, place them on top of each other and soften them by placing a wet handkerchief on them. This will make it easier to bend them without breaking.

Step 8 Sprinkle Sugar

Now spread one spoon ghee on the sheet and sprinkle 1 tablespoon sugar evenly. Once done, fold all the sides inwards to form a rectangular putharekulu. Once done, fold one side to form a roll.

Step 9 Serve

Repeat the process with the remaining batter and prepare folded putharekulu rolls.
