News India Live, Digital Desk: Shahi Tukda is basically a Mughlai dish, in which bread is fried in ghee and served with syrup and rabri. But its fusion with ‘custard’ makes it more creamy and light. Essential Ingredients (Ingredients) Bread slices: 6-8 (edges cut) Milk: 1 liter (full cream) Sugar: 1 cup (for syrup) and 3-4 teaspoons (for milk) Custard powder: 2 tablespoons (vanilla flavor is best) Desi Ghee: For frying Cardamom powder: ½ teaspoon Saffron: 7-8 threads (optional)Dry fruits: chopped almonds, pistachios and cashewsStep-by-Step Recipe1. Prepare the bread: Cut the edges of the bread and cut it into triangles. Heat desi ghee in a pan and fry the bread pieces until they become golden and crisp. After frying, take them out on tissue paper.2. Make Sugar Syrup: Add 1 cup sugar and ½ cup water in a vessel and boil it. Add cardamom powder and saffron in it. When the syrup becomes slightly sticky (less than one string), turn off the gas. Now dip the fried bread pieces in the syrup for 30 seconds, take them out and arrange in a plate.3. Prepare custard rabri: Bring milk to boil and let it thicken slightly. In a separate bowl, make a solution of 2 teaspoons of custard powder with cold milk. Slowly add this solution to the boiling milk and stir continuously to avoid lumps. Add sugar and cook for 4-5 minutes until the milk becomes creamy. 4. Final touch: Top the syrup-dipped bread pieces with hot or cooled custard. Decorate it with chopped dry fruits and silver work on top. Pro-Tips: Crispiness: Do not leave the bread in the syrup for too long, otherwise they will become soft and soggy. Health Tip: If you do not want to fry in ghee, you can also toast the bread in the oven or air fryer. Cold or hot: The taste of custard becomes better when eaten cold.
