Ingredients required to make Mango Curry: Raw mangoes (grated or pulp): 2 medium sized Gram flour: 3 tablespoons Coconut milk or freshly grated coconut: 1 cup Jaggery: As per taste (to balance the sourness) Green chillies: 2-3 (chopped) Ginger-garlic paste: 1 small For tempering: Mustard seeds, cumin seeds, asafoetida, curry leaves and dry red chillies. Spices: Turmeric, salt and finely chopped coriander. Method of preparation: Step-by-step. Cook the mangoes: First of all, peel the raw mangoes, cut them into pieces and add some water and boil them. When the mangoes become soft, mash them and prepare the pulp. Prepare the batter: Mix gram flour and some water in a vessel and make a smooth batter. Now add mango pulp and coconut milk (or ground coconut) to it. Be careful that there are no lumps in the solution. Cook: Keep this mixture to heat on medium flame. Add turmeric, salt, ginger-garlic paste and jaggery to it. Cook it on low flame until the curry thickens slightly. Add tempering: Heat oil or ghee in a small pan. Add mustard, cumin, asafoetida, dry red chilli and curry leaves and crackle. Pour this hot tadka over the prepared curry.
