Creamy chicken soup recipe

Ingredients

  • Butter: 1½ tbsp
  • Bayleaf: 1 no
  • Peppercorn: 5-6nos
  • Garlic chopped: 2tsp
  • Onion chopped: ¼ cup
  • Maida: 1½ tbsp
  • Chicken (with bone): ½no (400gms)
  • Thyme: a sprig
  • Salt to taste
  • Water – 1.25 lt
  • Spring onions chopped: A handful
  • Cream (optional): 2 tbsp

Steps to prepare at home:

  1. Heat butter in a pot and add bayleaf, peppercorns to it.
  2. Stir in chopped garlic, onion and saute well.
  3. Sprinkle maida into the pot and mix well.
  4. Add chicken into the pot along with a sprig of thyme.
  5. Mix well everything to keep it on boil, also don’t forget to add salt to it.
  6. Pour in 1.25 liters of water and bring the mixture to a boil.
  7. Reduce the heat and let the soup simmer for 30 minutes.
  8. Remove the chicken from the pot, shred it off the bone, and set it aside.
  9. Toss in a handful of chopped spring onions for freshness and a hint of sweetness.
  10. Stir in 2 tbsp of cream for a rich, velvety finish. Serve hot and enjoy the comforting bowl of chicken soup!
