Ingredients You Will Need
To make sabudana dosa, you will need the following:
- 1 cup sabudana (tapioca pearls)
- 1/2 cup idli rice or regular rice
- 1/4 cup urad gave
- 1 teaspoon fenugreek seeds
- Salt to taste
- Water, as required
- Oil or ghee for cooking
- Finely chopped green chillies
- Fresh coriander leaves
- Grated ginger
Steps to prepare:
- Wash the sabudana well under running water to remove excess starch.
- Soak it in water for 4–5 hours or overnight.
- Wash the idli rice and urad dal separately.
- Add the fenugreek seeds to the rice and dal, then soak them in enough water for 4–5 hours.
- Drain the water from the soaked sabudana, rice, and dal before grinding.
- Using a blender, grind the rice, dal, and fenugreek seeds until smooth.
- Add the sabudana to the blender and grind again, creating a slightly coarse batter.
- Gradually add water to achieve a consistent batter suitable for dosa.
- Transfer the batter to a bowl, add salt, and mix well.
- Cover and allow the batter to ferment for 10 hours.
- Heat a non-stick or cast-iron tawa over medium heat. Lightly grease it with oil or ghee.
- Pour a ladleful of batter onto the tawa and spread it thinly in a circular motion.
- Cook on both sides until golden brown.
- Serve hot with coconut chutney or sambar.
