4 boiled, mashed, peeled potatoes

1/2 cup boiled peas

1 teaspoon cumin

1 tablespoon chopped green chilli

1/2 tsp garam masala powder

1/4 teaspoon salt

2 teaspoon coriander powder

1/2 teaspoon red chilli

1 teaspoon dry mango powder

2 teaspoons finely chopped coriander

1 cup flour

1/2 teaspoon salt

1/3 cup water

2 tbsp semolina

3 tbsp refined oil

Step 1

To make the dough, mix flour, semolina, salt and oil. Add water as required to make the dough soft. Cover the dough with a wet cloth and keep it aside for 15 minutes.

Step 2

To make the filling, squeeze out the water from the green peas. Mix potatoes, cumin, coriander, green chillies, dry mango powder, salt and coriander. Divide the filling into 2 parts and keep aside.

step 3

Now, mix 3 tbsp flour and ¼ cup water and make a thin batter. Knead the dough for a minute before rolling out.

step 4

Divide the dough into two equal parts and make patties from them. Roll each into 11 inch diameter. Spread one part of the filling evenly on the other part.

Step 5

Roll the sheet gently and add a little water to seal the ends firmly.

Step 6

With a sharp knife, cut both ends about 1 inch long, this will make about 14-16 pinwheels. Press each pinwheel lightly. Do the same with the other sheet, you will have about 30 pinwheels.

Step 7

Heat oil in a frying pan over medium heat.

Step 8

Dip the pinwheels into the batter one by one and fry the pinwheels in small batches until they turn golden brown on both sides.

Step 9

Each batch will take three to four minutes to cook. Repeat this process until all the pinwheels are cooked. The crunchy, delicious pinwheels are now ready to serve.
