Sankranti special: How to prepare traditional Khichdi recipe

Ingredients:

  • 1/2 cup rice
  • 1/4 cup moong dal (yellow split lentils)
  • 1 tablespoon ghee
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon ginger (grated or finely chopped)
  • 1-2 green chillies (optional)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 4 cups water (adjust for desired consistency)
  • Fresh coriander leaves for garnishing (optional)

Instructions:

  • Wash the rice and moong dal thoroughly under running water.
  • Heat ghee in a pressure cooker. Once the ghee is hot, add cumin seeds.
  • When the cumin seeds begin to splutter, add grated ginger and green chillies. Sauté for about a minute until aromatic.
  • Add turmeric powder, followed by the washed rice and lentils. Stir well to combine.
  • Pour in the water as needed, and add salt to taste.
  • Mix thoroughly and close the lid of the pressure cooker.
  • Cook for 3-4 whistles or until the rice and lentils are soft and fully cooked.
  • After cooking, open the lid and gently stir the khichdi. If it is too thick, add more water to adjust the consistency.
  • Garnish with fresh coriander leaves and drizzle some ghee on top for an extra rich taste.
  • Serve hot with pickles, yoghurt, or papad on the side.
