Be it Golgappa or Puchka, its biggest specialty is its crunch i.e. crispness. At home, we often use the right flour or semolina but make a small mistake in the way of preparation, which the vendors never do. If you also want a market-like taste at home, then this recipe is for you only.
what is magical trick
Most people knead the dough with plain water but street vendors use boiling hot oil (moyan) to get crispiness and wet cotton cloth to set the dough. But the biggest secret trick is to use a pinch of baking soda and soda water in the flour. This makes the puris hollow from inside and hard from outside.

How to make Golgappa like market
- 1 cup fine semolina, 2 teaspoons flour, 2 teaspoons hot oil and cold soda water for kneading.
- First of all, add hot oil to semolina and flour. Mash it until the oil is completely mixed. Now knead a very hard dough with soda water.
- Wrap the dough with a wet cotton cloth and leave it for 30 minutes. This is the step by which semolina absorbs water and gets the right texture.
- After rolling, keep in mind that smoke should come out from the oil. As soon as you add the puri, press it lightly and it will puff up immediately. After rising, reduce the flame so that they become hard like papad.
