Materials:

  • 2 raw coconut water
  • 2 Soft cream of raw coconut
  • 3-5 tbsp jaggery (palm/coconut/sugarcane – as per taste)
  • Grate half a coconut
  • ¾ cup hot water

  • First take the grated fresh coconut in the mixer. Add half a cup of hot water to it and keep it for 3-5 minutes. later
  • Blend in a mixer for 1-2 minutes to make the mixture soft and creamy.
  • Strain the mixture through a clean cloth or nut milk bag and extract the thick coconut milk. Remaining fourth again
  • Pour into a mixer, add the remaining hot water, swirl again and strain. Mix the milk of both times and keep aside.
  • Mix coconut water and half coconut cream in a mixer to make a soft paste.
  • Cut the rest of the cream into small pieces. Mix the prepared paste, coconut milk and jaggery in a bowl and mix well
  • Mix until jaggery is completely dissolved.
  • After this add chopped coconut pieces and stir gently.
  • Keep this pudding in the fridge for 1-2 hours to cool. Serve when cooled.
  • Jaggery can be more or less as per your preference.
