Spinach and Paneer Ravioli Recipe
Life Style: Try this easy to make and delicious Italian recipe with the goodness of spinach. This whole wheat ravioli filled with cheese and spinach is a hit with people of all age groups.
500 grams blanched spinach
100 grams grated cheddar cheese
1/4 teaspoon salt
1 tablespoon virgin olive oil
1/2 teaspoon basil
1/4 teaspoon masala black pepper
200 grams wheat flour
1/4 teaspoon salt
2 eggs
Step 1
Blanch the spinach leaves in boiling water for 1 minute. Wash in cold water. Squeeze out excess water and chop them finely.
Step 2
Heat olive oil in a pan and fry chopped spinach. Add remaining ingredients, mix well and remove from heat.

For the ravioli, mix all the ingredients (whole wheat flour, eggs and salt) together and knead into a stiff dough. Do not add water. If the dough seems too stiff, wet your hands and knead again. Wrap in cling wrap and keep the dough aside for 10 minutes.

Roll out the dough into a 12″ wide and 16″ long piece. Fold and roll again. Repeat this process three times. Cut into six 2-inch-wide strips.
Step 5
Place a spoonful of stuffing evenly 2″ apart between the strips. Moisten the strips between the fillings. Place the remaining strips on top of the filling strips. Press lightly around the filling so that they seal well. Cut into square pieces keeping the filling in the middle.
Step 6
Add 1 teaspoon salt in a big pan and boil water. Add the ravioli and cook for a few (2-3) minutes until they are almost cooked, being careful not to overcook. Drain the water and soak in cold water.
Step 7
Place the ravioli on a plate and garnish with deep-fried basil and garlic.
