If you are a vegetarian or looking for a healthy alternative to egg omelette, then Suji Omelette is the best choice for you. It can also be called ‘Vegetable Semolina Pancake’. It is crispy from outside and very soft from inside. Let us know the easy method to make it at home in minutes. Essential Ingredients Ingredients Amount of semolina (rava) 1 cup curd 1/2 cup (fresh) gram flour 2 tablespoons (for binding) Vegetables Onion, tomato, capsicum, grated carrot Spices Salt, black pepper, chili flakes, green chilies, coriander, a little Eno (Eno) or baking soda, oil/butter (Step-by-Step Recipe) Prepare the batter: Mix semolina, curd and gram flour in a large bowl. Add little water to it and prepare a thick batter (like the batter for idli). Keep it covered for 10-15 minutes so that the semolina swells properly. Mix the vegetables: After 15 minutes, add all the finely chopped vegetables, green chillies, green coriander and all the spices in the batter. If the batter seems too thick then add some more water. Trick to make fluffy omelette: Just before making the omelette, add half a teaspoon of Eno or a pinch of baking soda and mix gently. This will make the omelette very fluffy and light. Cook on the pan: Heat a non-stick pan and apply some oil or butter on it. Now spread one tablespoon of batter on the pan (keep it a little thick like an omelette). Cooking: Cover it on low flame and cook for 2-3 minutes. When the lower surface becomes golden and crisp, turn it over and cook the other side well. Serving Tip: Serve it hot with mint green chutney or tomato ketchup.
