Know what the ingredients are

  • 1 cup fenugreek seeds
  • 3-4 medium sized onions 3-4 tbsp oil/or desi ghee
  • 1 tsp whole coriander
  • 1 tsp fennel
  • 10-12 garlic cloves
  • 1 tsp cumin
  • 4-5 green chillies
  • 1-2 cups curd
  • 1 tsp turmeric powder
  • 2 tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp asafoetida
  • salt as per taste
  • 2 teaspoon raisins
  • 2 tsp kasoori methi
  • Green coriander.

Fenugreek curry recipe

  • For fenugreek curry, you have to take thick fenugreek seeds and soak them in water overnight so that they swell properly.
  • After this, you have to put fenugreek seeds in water and boil for some time till one or two boils. This reduces its bitterness.
  • Take whole coriander, cumin seeds, garlic cloves, put them in a mortar or pestle and grind them coarsely. This will prepare tadka.
  • Finely chop green chillies, onion and remaining garlic. If you want, instead of cutting onion and garlic, you can also make a paste of it.
  • Heat mustard oil in a big vessel and when it starts smoking, add chopped onion, green chillies and cook it in the oil while stirring till it becomes soft.
  • Until the onion starts to appear light golden brown, add coarsely ground spices to it and fry for some time. After this, add whole garlic cloves and fry them.
  • When the masala is ready, add some water to it. Now take curd in a bowl, add turmeric, red chilli powder, coriander powder, asafoetida and beat it well.

  • Add the prepared curd to the spices and mix it and fry it for some time so that the oil starts separating.
    Now add boiled fenugreek to it and also add salt as per taste. Along with this, add raisins to the vegetable.
