To make Dahi Vada, add 1 bowl of moong dal and 2 spoons of urad dal and soak it in water overnight. To make Dahi Vada, you have to use unpeeled moong dal. After soaking the pulses, wash them and grind them in a mixer without water. If there is difficulty in grinding, you can mix 1 teaspoon water.

Now beat the ground moong dal well. To check whether the dal has been beaten well, take water in a bowl and add 1 drop of dal paste in it. If the paste comes above the water then understand that the dal is ready. If it has settled down then the dal needs to be beaten further. Now add some salt to the lentils. Heat oil in a pan, put vada in round shape and bake. Heat water in a pan and put the roasted vada in it.

Prepare sweet chutney of tamarind or mango powder. For chutney, mix 3-4 spoons of mango powder in water and keep it to boil in a pan. Now add jaggery in it. If you want, you can also add 2-4 spoons of sugar. Let it boil. Add black salt, red chilli and ground roasted jaari in the chutney. Add dry fruits of your choice and sweet chutney of Dahi Vada is ready.

Take fresh curd and add 1-2 spoons of water to it and beat it well. If you want, you can also add 2 spoons of sugar in curd. Or you can also keep plain curd. For green chutney, add coriander, green chilli, cumin, garlic and grind it. If coriander is less, you can also add some spinach leaves. Keep salt as per taste. To serve Dahi Vada, take out 2 vadas from the water. Add curd on top. Add sweet chutney and then green chutney over it. Add roasted cumin seeds, a pinch of red chilli and 1 pinch of salt and serve.
